I know some might disagree, but meatless meals are the best.
Not only do you save some money, since veggies are usually cheaper than buying meat, but you also don’t have to worry about getting sick from under cooked beef, chicken or pork!
At least…that’s a fear of mine.
I always find I feel lighter, not so sluggish, after eating vegetarian too.
Plus, it’s fun to create a tasty, fulfilling meal from an odd assortment of foods that you might not necessarily pair together in the first place, and when it’s done correctly, it can be AMAZING.
Take it from my boyfriend who’s not always the craziest about my no-meat meals. At first.
Admittedly, this recipe could use some slight tweaking, but it’s an awesome start.
What I love most, is how it is so SIMPLE.
Savory Sweet Potato
Ingredients:
- Sweet potato
- Avocado
- Salsa
- Egg
*I know. I know. Some may not consider this vegetarian now, with the egg and all, but I do.
Directions:
Bake sweet potato at 400 degrees, on greased cookie sheet, for 45 minutes to an hour.
While the potato is potating, cut up the avocado, get your salsa ready and fry the egg!
Once your potato is tender, assemble!
It really is that EASY! And good too!
A runny egg really makes it.
You may want to play around with some other ingredients and seasonings though, to really have it suit your taste buds.
I’ve fixed this for dinner a couple of time’s now, changing it up each time.
While it is pretty good as is, Sam and I agreed it needed to pack a bit more punch flavor-wise.
I’ve added guacamole instead of avocado. I’ve fried two eggs instead of one.
I think next time I’ll cube the sweet potato, adding seasonings to those pieces, before throwing it in the oven, and (or) I’ll dice up some pickled jalapenos to throw on top!
Here’s another vegetarian recipe I whipped up this week. The Kung Pao Brussels Sprouts are supposed to be an appetizer, or a side dish, but I cooked up some rice to make it a meal.
If you are into Brussels sprouts and Asian flavors, you’ll dig this.
Literally, you’ll shovel this into your mouth.
It was even Sam approved! So you know it’s gotta be delicious.
